Protein Powder Pancakes [One Pan, Gluten Free, Dairy Free]

Protein Powder Pancakes

Ingredients

  • 1 cup gluten free flour, we like measure for measure

  • 1 scoop protein powder

  • 1 scoop collagen peptides

  • 1 tablespoon baking powder

  • 1 cup milk, we like full-fat coconut

  • 1 teaspoon vanilla extract

  • 1 egg

  • 2 tablespoons coconut oil, melted

  • Pinch of salt

Instructions

  1. Get the skillet pan over medium-high heat: I like doing this so it’s ready and hot once the batter is together, which doesn’t take long.

  2. Dry ingredients: add 1 cup flour, 1 scoop protein powder, 1 tablespoon baking powder, and pinch of salt to a bowl. Make sure it’s well combined.

  3. Make a well: with the back of a spoon, push the dry ingredients to the edge of the bowl, as best as possible, to make a little well or trench in the center of dry ingredients. This saves an extra bowl!

  4. Wet ingredients: add 1 cup milk, 1 egg, and 2 tablespoons melted coconut oil to the well! Lightly mix, making sure it’s fairly smooth.

  5. Mix together until just barely combined: stir together until all the flour is hydrated, but be careful not to overmix. Lumps are okay! Let the batter rest for 3-5 minutes(ish) to let the baking powder start to react.

  6. Make pancakes: use a 1/4 measuring cup (or eyeball) to pour each pancakes onto the hot skillet. Look for bubbles forming on the uncooked surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown. Remove from pan, keep ‘em warm, and repeat until batter is gone!

  7. Enjoy a balanced breakfast: we love pancakes with berries, scrambled or dippy eggs, and bacon or sausage!
