Enchilada Skillet

Ingredients

• 2 tbsp olive or avocado oil
• 1 red onion
• 1 tsp minced garlic
• 2 lbs ground beef (or turkey, or chicken)
• 2 cups chopped zucchini
• 1 large bell pepper (preferably red)
• ½ tsp cumin, chili powder, paprika, red pepper flakes
• salt & pepper to taste
• 3 taco-size tortillas
• 2 chopped green onions
• 1 avocado
• 15 oz red enchilada sauce
